Braised Red Cabbage

Ingredients
- 900g red cabbage - shredded
- 450g onions - chopped small
- 450g apples - cored & chopped small
- 1 clove garlic - chopped small
- 1/2 whole nutmeg - grated
- 1/4 teasp ground cinnamon
- 1/4 teasp ground cloves
- 3 tablesp brown sugar
- 3 tablesp wine vinegar
- 10g butter
- salt & pepper
Method
- Preheat oven to 150°C.
- In a saucepan, arrange a layer of cabbage, then a layer of onions and apples with a sprinkling of spices and sugar.
- Continue with these layers.
- Pour in vinegar and add butter on top.
- Cover and cook slowly for 1½ to 2 hours, stirring infrequently.
- It will gently reheat if needed.
