Braised Red Cabbage

Braised Red Cabbage

Ingredients

  • 900g red cabbage - shredded
  • 450g onions - chopped small
  • 450g apples - cored & chopped small
  • 1 clove garlic - chopped small
  • 1/2 whole nutmeg - grated
  • 1/4 teasp ground cinnamon
  • 1/4 teasp ground cloves
  • 3 tablesp brown sugar
  • 3 tablesp wine vinegar
  • 10g butter
  • salt & pepper

Method

  1. Preheat oven to 150°C.
  2. In a saucepan, arrange a layer of cabbage, then a layer of onions and apples with a sprinkling of spices and sugar.
  3. Continue with these layers.
  4. Pour in vinegar and add butter on top.
  5. Cover and cook slowly for 1½ to 2 hours, stirring infrequently.
  6. It will gently reheat if needed.
