Pulled Chicken

Ingredients
- 10-12 boneless chicken thighs
- 250ml passata
- 100g barbeque sauce
- 2 tbsp chipotle or chilli paste
- 2 red onions, halved and sliced
- 2 garlic cloves, crushed
- 2 tsp paprika
- 2 tbsp vegetable or rapeseed oil
- 1 lime, juiced
- 1 tbsp light brown soft suger
Method
- Heat 1 tablespoon of oil over a high heat and brown the chicken. Transfer to the slow cooker once cooked. Add the remaining oil and fry the onions until they soften. Stir in the paprika and garlic and cook for a minute. Transfer to the slow cooker. Swirl 100ml of water around the frying pan, then add this to the slow cooker too.
- Add the chilli paste, BBQ sauce, passata, sugar, and lime juice to the slow cooker, then season and stir. Cook for 6-8 hours on low. Shred the chicked, then serve with the sauce.
